My headcanon is that Exalted age in appearance wildly differently, which probably in some sense depends on where their Essence is leading them. Maybe for some Solars there is a "rightness" to their Essence in some sense for them to continue aging for several decades after Exalting and then stop, while for others perhaps there's an at least mild reversal of the aging process, and it really depends on who you are, how this works. (Does your Essence and soul reflect a sort of drive towards looking like a super-fit and attractive old guy/girl for instance?). In a sense this just obeys the "Rule of Cool".
I guess partly this is to avert the idea of Celestials being sort of vampire like, fixed at the age at which they were "embraced" (by the Sun/Moon/Stars), and allow some more personal trajectory in changes in appearance depending on the character.
Is there a canonical take on it? (There may be one which badly refutes my headcanon I'm sure
