Are there any mechanics for exactly how and when feeding on specific Essence changes the nature of a Spirit? Does it have to be a certain amount of Essence? Does it need to stay in the entity's pattern for a specific amount of time?

Is it an instant change even if it's a single point of Essence? What if it isn't voluntary feeding? If something forces a point of incompatible Essence into a Spirit, does its nature shift?

There aren't hard mechanics, because it's almost entirely an NPC-based concern, but the common methods seem to be sustained activity in an incompatible environment or wholesale consumption of proportionately powerful or numerous spirits — a Relict Man might take months to make the transition, but Irinam's fateful unbalancing was a matter of eating a single equally-potent spirit when she was at least an Ensah.

Are there mechanics for consuming another Spirit located anywhere, or are they similarly neglected as a behind-the-scenes NPC thing?

I know that stealing Essence from other Spirits is detailed, but I'm not clear if 'consuming' another spirit merely requires draining them of all Essence in this manner (and kills them in the process) or if there's more to it.

That's how it works. Spirits eat and are made of Essence so feeding on Essence from other spirits is consuming them. Killing gets you more Essence to eat but if you're just eating half of every spirit that comes by that's enough too.

You could look at Predators for more but there's not much more to it. Start eating Essence that isn't related to you, you become magath, other spirits don't like you and you feed funny. Them not liking you is more because they're organized by their focuses.

So should eating another Spirit's Essence cause damage? Or is it just that if you eat all of it, the other Spirit dies?

This one. Most of a spirit's Essence is wrapped up in Corpus, you need to get rid of that, too. But if you just take a spirit's Essence away it's not going to have access to a lot of its powers. But all spirits have a natural way to swipe Essence from others without harming Corpus.

Taking that unrelated Essence, even without killing the other spirit, can lead to becoming magath, just like sitting in an unrelated locus and eating it all.
