Adventure Time introduces Marceline as an incredibly territorial vampire with the ability to turn into a giant bat monster . . . which is pretty much a textbook Tzimisce. The whole bat-monster form is the level 6 power of Vicissitude. And she was a child during the Great Mushroom War (which occurred roughly a thousand years ago). So she's a Tzimisce methusaleh of at least 7th generation (or else she wouldn't be able to learn level 6 powers).
Given the way the series portrays her: one serious boyfriend, playing in a garage band, shave your head just "because" . . . I'm going to guess she was embraced between the ages of 17 and 20. Old enough to be cool in the eyes of Finn (who's ca. 14), and old enough to be comfortable in her skin, but not old enough to have a truly adult vibe. Of course, the whole post-apocalypse, living for a thousand years thing is going to skew things . . .but that's still roughly where I'd place her.
And speaking of that boyfriend - Ash appears to be a Tremere (or maybe a wannabe). We see him use blood magic several times in the show, and in a post-apocalyptic world, who's going to complain about a Tzimisce shacking up with a Tremere. So Marceline could easily have learned some magic off him.
As for the whole "tentacle monster" thing, I don't think that was her at all, but instead her father's amulet. Finn turns into almost the exact same creature, too, when he puts it on.

Now for the hard part - the whole "half-demon" thing. Marceline is the daughter of Hunsen Aberdeer, demonic ruler of the Nightosphere (an Umbral realm of chaos and suffering). And, in the World of Darkness, true demons can't have kids (although some banes can). Yet, as we see in the Simon & Marcie flashbacks, Marcelline never looks like a normal human child. Her skin's blue-grey, and she has pointed ears, for example.
However, if you look at Hunsen Aberdeer and how he lives . . . I don't think he's a demon (or a bane) at all. With his yellow-red eyes and blue-gray skin, he looks nothing like his subjects. Plus, his home looks like it came right out of an early '80s sitcom: refrigerator, comfy recliner, tv . . . None of which matches anything in the Nightosphere, but which does scream "former human". And given that he has powerful magical artifacts lying around . . . .
My guess is that Hunsen Aberdeer is actually a former mage who turned himself into his current form in the search for immortality (god only knows he wouldn't be the first WoD mage to do so). And he just decided to call himself a demon afterwards. That would explain the artifacts (and the lack of personal magic), the very human lifestyle, and (probably) the fact that he can father children who are close enough to stock humanity to be embraced.
Again, though, we're still missing key details about Marcelline's mother, and her sire (assuming they aren't the same person). And its still possible that Adventure Time will throw us another curveball or two about her past. But this analysis works with what we know (at least right now)
