Lets take a look:
The MAIN factor that makes Nosferatu the Spies of WoD is in the Clan Lore, their Founder was a legendary hunter. Wait, what does Hunting have to do with spying? Trapping is a form of hunting. To trap game, one must know the habits of the target game.
Nosferatu due to their Curse, have always had to reside AWAY from humans and thus, most other vampires. Partly no one wanting to be around them, partly cant be seen by humans or else there will be problems. This lends the Nos to 'not participate' in the day to day politics. Or lends to this appearance.
So they tend to live in shitty places no one else will venture in. This is also another way to obtain 'security'. Who chases a Nosferatu down in the sewers, the landfill, the riverbed? No one.
This lends to Nos havens becoming a Base of Operations.
Also due to their Curse, Nos tend to work together, even in grudgingly, for Clan betterment. Few Clans do this, and the ones that do tend to be way more internally competitive. Ventrue and Setites will screw each other over. Assamites less so but they dont have the numbers the Nos do.
So Nosferatu have a bunch of Vamps that generally work together for mutual defense and betterment. This is called a 'Network Effect'. More on this later...
Disciplines? The spread works pretty well for Nosferatu.
Obfuscate is obvious, modern tech is a concern for ALL vamps due to infrared cameras being cheap and plentiful. But as numerous other posters stated: There are Merits and V5 powers that mitigate this. Obfuscate vs Auspex is CONTESTED if equal - not an automatic loss to Auspex clans. Lots of your examples compare one or two LVL5 powers vs LVL1-3 powers. Do you not see the inefficiency? Or do all characters in your game max out their Disciplines over short periods of time?
Toreador are the main rivals for the Nosferatu, but they generally dont want to sharpen their delicate senses to see, hear, SMELL more filth on a Nosferatu. And the Nos have counters to Auspex. Toreadors get their info by teasing it out of the target. This usually requires in-person application.
Malkavians have a better setup, but, with Malkavians, YMMV. Even between interactions with the same vamp, even in the same night.
Tremere: The perfect OVER-ENGINEERED counter! Thaumaturgy does it all! Well, it can do a lot. IF you have the EXP and if your ST adds more realism, TIME to study. HOW MANY Players roll Tremere just to skip Thaumaturgy and focus solely on Auspex or Dominate? Not. Many. And there arent that many Tremere to begin with...
Tzimisce. Great Discipline spread. Likely the LEAST to care with finding what the Nosferatu are up to. or spying beyond their demesne. They have experiments and land to play with.
Potence is VERY handy if not sexy. But Nosferatu dont use it like Brujah, for combat or intimidation, not as much. Nosferatu need it more for Survival concerns, floods and moving heavy shit in the sewers as well as digging a temporary haven in the riverbed mud. And back to the hunter theme, Potence+Obfuscate = hit first, hit last, no one saw shit. Boogeyman. Potence makes Staking a vamp easier AND carrying them down to the sewer while obfuscated all that much easier. Not to mention nabbing food or someone else's ghouls.
Animalism is not widely used because most Players dont understand animals. Animalism is a Network leveraging tool. Animalism has NO COUNTER other than Animalism. Over 20 years and i have not seen a thaumaturgy counter to Animalism, nor have i seen Auspex being useful against it. Because who cares about animals stunts, rite?
How does spying with animals work? Basically in 2 general ways. Having animals track a target. Possessing an animal and using their abilities. You have to study the abilities of animals but in short: Auspex1 in V20 claims to "double" the range(and sensitivity) of the user. This doesnt come close to what most animals can do, especially for olfactory. Ravens and Crows appear to identify individual humans communicate identified individuals to each other. they can also solve multi-step problems with some primitive tool use. Can roam about 40miles/day so tracking people/cars shouldnt be too hard, Auspex cant do this, especially several targets at once.
Dogs can scent track way further than humans, up to 130 miles in some cases. Average large city is only a few miles diameter.
Etc... Little wonder the Nos know where all the city vamps live.
Possession: Ride an eagle/hawk and track during the day, watch that important meeting from afar and lip read. Ride a dog and listen from several rooms over, or even from another building if close enough. Possess a burrowing animal, dig your tunnels, and listen in from inside the building. And in all the Lore, how many vamps worried about pest control? Almost none, if any.
Imagine a few Nosferatu somewhere down in the grimey sewer, and they rarely, if ever, go to the surface. Their main choice of travel is to possess animals, have them ferried to the surface, and they go about spying. Even during the day. Does anyone other than the Nos know about them? Not likely. And if they did, what could they do about it?
Now, to that network effect, most Nosferatu can cheaply get Animalism1 and they are in. They are part of the Network. They can share animals, communicate between them, and each vamp can deploy several animals at once. Auspex cannot do this and Auspex 1, 2, 3, and 4 REQUIRE you to be in person to use. Most Nos if they wanted, could likely get Auspex1, depending on ST.
Nosferatu already have the spy network. Other clans can communicate with each other, sure. But how many can leverage clanmates for general info like Nosferatu?
Now, back to Nosferatu being impartial info brokers: Remember, thats the image. Trappers need to know the preys behavior. Nosferatu for damn sure use that bartering to their advantage. But they dont want the typical things other clans want, so no one notices. Or cares?
