What obstacles do Vampires, Changelings, and Sin-Eaters have that would detract them from enjoying life? I could be one of these and still have a hedonistic lifestyle, right? I could just make a good effort to stay away from trouble.
well, vampires are in an uphill battle for their humanity, changeling have to battle for sanity and on the run from the gentry and huntsman, but sin eaters can have a relatively beneficial bargain with the geist and enjoy life

Cannibalism is when the same species consume each other, right? Are you still considered a cannibal since Vampires are a different race. I think you only engage in cannibalism one you are a very old vampire.

Biologically speaking vampires are neither a different species nor a different race. They're humans, just dead and reanimated.
Vampire. Immortality is a big plus, and the social stuff would make it a lot easier. Changelings have too much torment and I can already be a weirdo living for a roughly human lifespan, and I don't want to be hassled by ghosts for the rest of my human life the way a Sin-Eater might. Vampire would probably be the way to go if you don't want to be hassled by people, plus the advantages are pretty wild compared to the drawbacks. Though I'd need to do something about the windows, Dominate would make contract work cheap and easy.

How do ghosts bother a Sin-Eater. I assume they can see and talk to Ghost but they can just ignore them.

They see and sense sin-eaters, and apparently seek them out to help them do things.
Imagine if all your neighbors were constantly knocking at your door to try and ask you to help them with stuff. You could ignore the constant knocking and calls for assistance, but it would still be incredibly annoying.
I dont think ghosts just know a geist when they see one. is there something I'm missing?
Bound have something called a Liminal Aura. Their Synergy dictates how large and how powerful it is, but essentially any ghost or Bound within the Aura will recognize you for what you are and you actually create a persistent Manifestation Condition for ghosts.
interesting. I still stand by the bound though,vthey dont have to deal with as many backstabbers as vampires or oaths and the gentry like changelings
An important thing to bear in mind: Unlike the other two splats in this question, Sin-Eaters have almost all of their drawbacks front-loaded.
Starting vampires have no clan bane, the longest interval for the lowest damage from sunlight, and can sustain themselves on the blood of animals.
Starting changelings roll a chance die for Clarity damage, have no extra frailties beyond the bane of iron, and can reap Glamour from people with relatively little consequence.
Starting Sin-Eaters roll a chance die to stop their geist from manifesting in response to their Ban or Bane (or extorting favors out of them to hold it off), haven't yet learned enough about their geist to filter down its less universal trigger for a crisis point, and become automatically detectable to every ghost within a mile (or hemorrhage Willpower to keep from doing so) as soon as they deal with the reason they came back or make headway on figuring out their geist's Whole General Deal, barring the circumstance where they die again.
The Bound are substantially more task-oriented than the Kindred or the Lost; changelings and vampires can, at least in theory, manage to reach a state of equilibrium where if they leave well enough alone they can last a decade or so without trouble. Changelings and vampires seek power and security because they're desperate and distrustful; Sin-Eaters are haunted, and because of that they have more than just their own concerns to worry about even in the unlikely event that they find a town with no ghosts — they are, by definition, never alone.
