My instinct says existing bonds are probably broken when the childe dies as part of the Embrace, but I'm not sure.
I'd say yes as you are also giving him more of your vitae which reinforce/restart the bond

Can a Vampire willingly choose to enter Frenzy at any time? Riding the wave indicates you need to already be in Frenzy, not that you can enter it.

Stir the Beast, the first Coil of the Wyrm, allows you to enter frenzy "unprompted," which indicates to me that normally you need an appropriate stimulus.

They can only let themeselves fall to frenzy if not using stir the Beast. That said, almost everything in the game is a stimulus to frenzy, even just a verbal insult.
So it depends on the situation you are thinking about.

Is there any clan, bloodline, or covenant dedicated to working with the strix or enslaving them somehow? I've seen a few that are supposed to fight against the strix, but none on the other side.

The fluff from Requiem for Rome gives us a legend about a group/clan of vampires who decided to stand by their compact/tribute to the Birds, even though the Propinqui felt the owls had twisted and abused the original terms. There was fighting over this and those individuals, to whom the Julii refered as Traditores, mostly erased and forgotten from history.

How much use do ghouls get from Protein? Can they in any way learn animal forms for Beasts Skin? Can they survive without air if they use Unmarked Grave? I don’t see any reason they couldn’t use any of the other abilities.

Yes, they can, though it does nothing for a vampire since as undead they no longer require breathing.
More importantly, lighting a cigarette or cigar might be a bit of a self-control exercise for some of them.

Or a quirk to help them feel closer to their lost humanity such as my character needing to smell coffee nearby or holding for little get togethers with mortals & fellow Kindred.

Do you just wanna start a thread that asks everyone's smoking habits?

THe answer is yes, though the Beast doesn't like it, and any weird flareups from a cigar/ette might cause fear frenzy.

Didn't in the first edition ArcaneArts that seeing films of the sun also made the Beast uneasy? Or am I mistaken by that statement and mixed it up with another gaming company?

If i remember correctly that's a specific bane from the book that had bunch of thems(I can't remember the title). Basically the Bane made image of the sun trigger frenzy roll. There was also bunch of other interesting bane ideas such as : being forced to count rice grains; being forced to dress in one color; having trouble with reflections; etc.

That would be the "Sun's Terrifying Visage" severe bane from Danse Macabre (p199).
